We spent the easter week-end camping @ The Splashy Fen Festival in the Southern drakensburg, it was awsome, toilets were clean, music & comedy was really GOOD and it was nice spending time away from home. 
During the week-end we ate lotsa junk food for breakfast egg/bacon buns for supper burgers, bean bunny chow and chip twisters for lunch the food was good and you just sit where ever he feel comfortable and have your meal.  One of the most popular food items was the LEGEND Burger got the works on for R40  not bad just to much to finish though.

Today is the last day at my current employment after 3 long years, and in the past years I have learn't alot a made many friends on the way and will always remember the good times. 
Today is also the day that my grandmother be laid to rest - although I have not seen her for many years I will miss her and treasure the memories that I have of her.  RIP Ouma.

Banana Muffins



240g / 500ml cake flour
5ml Baking Powder
5ml Bicarb of Soda
5ml Salt
Pinch of Nutmeg
100g / 125ml Sugar
1 Egg
80ml Milk
80ml Cooking Oil
112g / 125ml Banana pulp mixed with
12.5ml Lemon Juice

Pre-heat oven to 190'c
Prepare muffin tray

Sift all ingredients together.
beat eggs, milk, oil together.  Make a hollow in the dry ingredients and add oil mixture then banana mixture.  DO NOT overmix. Spoon into greased muffin tins to about 2/3rds full.

Bake for about 35min.


Chicken Stuffing

This recipe I got from my mom and its delicious:

2pkts (500g ea) Beef Sausages
1pkt Cream Crackers crushed
2 Eggs
Small Onion finely chopped
30ml Parsley
10ml Thyme
Vinegar

Remove skins from the sausages and mix all ingredients together, add a few drops of vinegar and parsley.

Stuff chicken with stuffing and remove once the chicken is cooked. 
I had so much left over last time I made so I froze it.
I made small little meat balls and rolled them in flour. and served them as cocktail snacks.

Variety:
Add small finely chopped green pepper
Add 100g Finely chopped bacon
Quick Banana Bread
130g / 160ml Sugar
210g / 430ml Cake flour
10ml Baking Powder
2ml Bicarb of Soda
3ml Salt
2 Eggs
225g / 250ml Banana Pulp
50g  / 125ml Nuts chopped (optional)
60g / 62.5ml Margarine/butter melted

Pre-heat oven to 180'c
Prepare a loaf tin 100mm x 200mm.

Sift together all dry ingredients.  Stir in the eggs , banana pulp, butter and nuts.  DO NOT overmix.  Pour batter into the loaf tin.

Bake for about 1 hour.

Coconut Cookies



250g Butter
300g / 375ml Sugar
2 Large Eggs
4x 250ml Cake flour
20ml Baking Powder
2ml Salt
125ml Coconut
Cherries cut up

Pre-heat oven @ 180'c
Prepare baking sheets

Cream butter, sugar, add egg and beat well. 
Sift cake flour, baking powder and salt together add coconut and beat thoroughly. Roll out into a ball and press down with a fork and decorate with cherries.

Makes about 9 dozen.

Star Cookies

250ml Sugar
10ml Vanilla essence
10ml Baking powder
500g Cake Flour
250g Butter ( I use the cheap blossom lite brick)
10ml Oil
1 Egg
100's & 1000's and sugar

Pre-heat oven to 200'c
Prepare the baking tray.

Cream sugar, butter, oil, egg ,essence together until creamy, then add baking powder and flour.
Roll out onto a floured surface adn press out star shapes.
Mix sugar and 100's & 1000's in a plate.
Take each cookie and press into the suagr mixture.

Bake for 8-10 minutes.

Romany Creams

We had Pizza on Wednesday and hamburgers fro last night, but though I would put a few of my favourite cookie recipes on.



250g Butter
250ml Castor Sugar
625ml Coconut
500ml Cake Flour
50ml Cocoa
Pinch of salt
5ml Baking Powder
50g Melted Chocolate

Heat oven to 180'c.
Pre-pare a baking tray.

Beat butter till light and creamy add sugar bit by bit stirring continuously and add coconut and mix well
Sift flour,cocoa , baking powder and salt together mix and to butter mixture until a soft dough has been formed. 
Roll teaspoons of dough into a ball and press down with a fork.
Bake for 10 minutes and then allow to cool.

Paste together with melted chocolate.
Makes bout 28 cookies

Corn & Chicken Fritters
2cups Cooked Chicken
1cup  corn kernels(tinned or frozen)
2 Eggs
3/4cup Self-raising flour
1/2cup Freshly chopped paresley
1bunch chives, chopped
Sal & Pepper

Method:
Combine all ingredients and mix well. 
Line Electric frying pan or cooking pan with baking paper and pre-heat.  Spoon heaped teaspoons of mixture into pan and cook each side until golden brown. 

Serve with salad, or ideal with a braai.

DO NOT use oil or fat.
Quick Crumpets
175ml Milk
1 Egg
10ml Baking powder
1ml Salt
15ml Oil
250ml Flour
10ml Sugar
Oil for Frying


Mix all ingredients together.

Heat frying pan and drop spoon fulls of batter into the pan.  Turn once bubbles form.

Serve warm with syrup or jam.

Greek coconut Tart

This recipe I have not made in moons, if you love coconut you are gonna love this recipe its simple to make yet delicious.  A very nice dish to make for friends and family.




Filling:
125g Butter
250ml White sufar
250ml Luke warm Water
3 Eggs
250ml Flour
15ml Baking Powder
500ml  Coconut


Pre-heat oven to 180'c
Spray a 20x30cm dish with a non-stick spray


Beat butter, sugar, water  and  eggs together.  Sift flour, baking powder and salt together, add coconut and mix well.  Mix the butter and flour mixture together.  Pour into pre-pared dish and bake for about 30minutes.

Sauce:
200g Sugar
250ml Water

Cook sugar and water together for 5 minutes.

Once the tart is baked, pour the sauce over and leave to stand for a minute.

Serve warm with custard.

Mini Garlic Buns



Garlic Buns
6 Sml Portuguese buns (WE like the ones pre-packed at Spar)
1/2 tsp Crushed Garlic in 150ml Melted Margarine
150g Bacon Bits - fried until almost crispy.
150g Cheese (Tussers / Gouda)
Feta Cheese

Line a baking tray with Tin Foil
Cut buns diagonally
Cover the inside of the buns with garlic & Margarine
Stuff the bacon in the the buns and top with Cheese, careful not to mess the cheese over the buns or in the tray.  Break and sprinkle the feta ova the cheese.
Bake in moderate heated oven until cheese has melted.







Pumpkin Fritters

I have not made this for a while, I decided to treat the kids



250ml Flour
500ml Pumpkin, cooked
20ml Baking Powder
2 eggs
Milk
Oil for frying

Cinnamon and sugar mixed

Sift flour, baking powder together.  Add eggs and pumpkin, thin he mixture with a little milk if to stiff.
Heat a Little oil and drop spoon fulls of batter into the pan and fry until golden brown.
Serve warm with cinnamon and sugar, and my kids used syrup as well.

I served this with curry Roti's and left ova pie from Sunday.

Sunday Brunch

Kids call them egg muffins.

The quantity of eggs and bacon depend on how many people you are feeding and how many every-one wants.    For our brunch I used 6 eggs and a 250g packet Streaky bacon, and a little grated cheese and left ova braai wors.

Spray a Muffin Tray very well with a non-stick spray

In each division place 2 pieces of streaky bacon criss-cross  ova each other and so the edges hang ova.
Break an egg in each section and sprinkle with salt, pepper and cheese.

Bake @ 120'c for about 15-20 minutes until the eggs are to your preference.


Serve with Salad

Saturday Braai

Salad
Dressing of your choice
Lettuce
Tomato, cubed
Cucumber, cubed
Onion sliced
Olives
Feta Cheese, cubed

Break lettuce up in pieces with your hands (DO NOT CUT - the leave's go brown if you cut them)
Arracnge lettuce at th ebase of the bowl, add the remaining ingredients.
Lastly arrange the olives and onions ontop.


Saturday Braai

Braai Potato Parcles
This is an old favourite, I first made this when my husband and I had our first " holiday " together we did not have much money so we had to stretch what we had.

4-5 Medium potatoes cut in cubes
1/2 Onion cut into thin slices
100g Bacon Bits
Vegetable spice
Salt & Pepper
Olive oil / 1 Tbs margarine
2 Pieces Tin Foil about 30cm

I pre-cooked my potatoes and onions.
Place potatoes, onions, bacon into the middle of the foil,  Wrap the foil around the potatoes like Little parcel but before you completely close it up add olive oil/margarine,  vegetable spice, salt & pepper. 
Wrap tightly and braai, keeping parcels on the edge of the braai grid careful not to burn them and turn them often.
This can be made and baked in the oven as well till potatoes are soft.

Varieties: 
Add Corn, Mushrooms
Replace Vegetable spice with Cayenne pepper and parsley.

Brown oven-baked pudding

I made just a quick spaghetti bolonaise last night and for dessert the kids had milk tart.


My youngest was telling me all his favourite foods and at the top of his list was 'pudding' then spaghetti bolonaise, then pies then every thing else I make.  (Too cute) So this morning I decided to put a pudding on.






Pudding:
1 Egg
200g (250ml) Sugar
120g (250ml) Cake flour
5ml Salt
12.5ml Fine apricot jam
12.5ml Vinegar
5ml Bicarb of Soda
250ml Milk

Sauce:
250g Margarne
250ml Ideal-milk
125ml Boiling water
200g (250ml) sugar 


Pre-heat oven to 180'c
Spray an oven dish with a non-stick spray


Beat eggs and sugar till well mixed.
Sift flour, salt together and add to egg mixture in turns with the milk and mix.
Mix the apricot jam, vinegar, bicarb of soda together and add to mixture.
Bake in  pre-heated oven till golden brown.

Place all sauce ingredients in a sauce pot and stir over medium heat till sugar has dissolved, keep on medium heat till pudding is done.

As soon as the pudding is cooked, pour sauce over.

Serve warm with custard or ice-cream.
