Today we bid farewell to one of our work collogues, gonna miss your energy in the office.  Good luck in yor venture.  So last night I made 2 of my most famous dishes Milk tart and Quiche while making hamburgers and chips for supper - the family was just a little jealous so I ended up making 2 Milk tart's and 2 Quiche's
I dont really wanna put these recipes on I would rather just keep them a secret.

Moist Chocolate Box Cake

I did not make any thing to awsome last night just pie and nacho wedges.( Kids request)  I will therefore just put a very simple recipe on for a cake that serves about 24 people its made in a beer box.


500ml Water
150ml Oil
100ml Cocoa Powder
10ml Vanilla Essence
8 Extra Lrg Eggs
75ml Castor Sugar
875ml Cake Flour
17.5ml Baking Powder
Pinch Salt

Beer box lined with foil and spray & cook.

Pre-heat oven to 180'c
In a saucepan combine 1st 4 ingredients and bring to boil stir till smooth.  Pour into a large mixing bowl and allow to cool slightly. Beat eggs and castor sugar until almost white in colour using an electric mixer add cocoa mixture together with the sifted dry ingedients.
Pour mixture into foil-lined greased beer box (shiny side facing you)

Bake in pre-heated oven for 30-35minutes

I will get a topping / icing recipe and post as soon as possible.

Moms Fridge tart

1tin Grandilla Pulp
1tin Mixed fruit ( optional )
1/2c Castor Sugar
1 Pkt tennis biscuits
1 Pkt Lemon jelly

Dissolve jelly in 1/2cup hot water. Set aside to cool

Place layer of tennis biscuits at the bottom of a rectangle,  medium dish.  Save some biscuits for the topping.

Beat ideal milk till stiff then gradually add sugar and cooled jelly, and mixed fruit. Pour over biscuit layer.
Sprinkle remaining biscuits over top.

Allow to cool in refrigerator.

Apple Crumble

One of my favourites, haven't made it for a while though.



Pastry:
125ml Sugar
125g Butter/Margarine
375ml Flour
8ml Baking Powder
Pinch of Salt

Pre-heat oven to 180'c and spray pie dish with spray & cook.

Cream together sugar, and margarine until light and fluffy. Sift togther all dry ingredients together and gradually add to creamy mixture.  Press 2/3rd's of the pastry into pie dish. 

Filling:
385g can Pie apples
125ml Sugar
50g Sultanas
Cinnamon

Mix apples, sugar, sultana's and pour over pastry in pie dish, sprinkle cinnamon on top.
Take the remaining pastry and  grate over mixture.

Bake @ 200'c for 30-35min.

Serve hot with cream or ice-cream
Its a Monday,... and not feeling so well today.
We had a braai and a childrens party this week-end.  I never prepared a meal so nothing to post.  I have got a busy agenda this week but there will definetly be some very good recipes comming up.

Easy Hedgehogs

It was my youngest cake sale today so made the following for him to take to school

This is one my most secret recipes that I have had forever.  Its a cheat way to make them but shuu... don't tell any-one.

1 Loaf day-old bread cut into equal cubes crusts removed
750ml Sugar
250ml Cocoa
375ml Water
30ml Butter
5ml Vanilla Essence
3c Coconut

Store bread in a air tight container. 

Mix the rest of the ingredients except for the vanilla essence in a pan over moderate heat until sugar has dissolves, boil for 1 minute. Remove from heat and add vanilla essence.
Dip the bread cubes into syrup mixture then roll in coconut.
Cool on a wire rack and store in an air tight container
Makes about 40cubes.




Chocolate Fairy Cupcakes
100ml Self Raising Flour
100 Cocoa
5ml Baking powder
100ml Castor Sugar
80g Soft Margarine
2 Eggs

Pre-heat oven to 180'c.
Arrange 60 fairy cases on a baking tray.

Sift flour, cocoa,baking powder and castor sugar together add margarine,eggs and beat well.  Spoon teaspoon fulls of mixture into the cases.  Do not overfill.
Bake at 180'c for 10-15min until well risen.
Cool on Wire rack


Icing:
200ml Icing sugar
15ml water (give or take)
60 Smarties

Sift icing sugar, add enough water to make a spreading consistency.
Decorate each cake with a smartie.


I was not too happy with the colour of the smarties since they changed them so maybe jelly tots would be better.
