Sweet Corn

4-6 Sweetcorn on the cob
100g Margarine
Salt

Take a large pot of water and fill half way add sweetcorn cut into 3 equal pieces and allow to cook on med-high heat till soft.
Once corn has cooked, drain water and melt margarine in pot about making sure that the corn is rolled  all around, leave the corn in the pot on a low heat to allow the maragine to absorb into the sweetcorn. Sprinkle with salt.

Serve warm with a meal or with a braai.


Chicken stuffed with Creamy Pesto



4 Chicken breasts, skinned and de-boned
Bunch Fresh basil
50g Parmesan
120g creamed cheese, softened
1-2tsp Olive oil
2 Garlic Cloves
Salt and Pepper

Mix garlic, basil, oil oil, creamed cheese in a processor till smooth.
Cut a slit into the chicken breast to make a pocket, fill the cream filling into the chicken and secure the chicken breast with tooth picks.
Take each piece of fillet and cover with tin foil and steam for 30-35min.

Serve with steamed vegetables.

Chilli Corn Fritters

These fritters can be made as hot as you like,all depends on individual taste.



2lrg chillis chopped finely and seeds removed
200g corn kernels
5ml pepper
5ml salt
45ml maizina(corn starch)
45ml flour
250ml ice cold water

Combine flour and maizina together, add water and mix to a smooth batter.  Add corn,pepper, salt, chilli's and mix well .
Heat oil in frying pan and drop tablespoon batter into the pan and fry on each side till light brown, drain on a paper towel.

Serve with dipping sauce of your choice.

Sausage Rolls

Found this in a magazine, its simple and delicious.

2ml salt
500ml Cake Flour
250g stork bake, cubed
80ml ice-cold soda water
750g pork sausages
1-2 eggs, beaten
30ml lemon juice

Pastry:
Mix salt, flour together, add Stork and rub into the dry ingredients until the mixture resembles crumbs. Add soda water and lemon juice and mix to form a firm dough.  Wrap in clingwrap and refrigerate for a hour. 
Pre-heat oven to 200'c and pre-pare a baking sheet.  On a floured service roll out the dough into 3mm thick.
Filling:
Remove the meat from the casing and shape meat into a long sausage.  Put sausage on one side of the pastry and fold over. Brush the edge of the pastry with beaten egg. Cut the roll into 4cm lengths, arrange on the baking sheet and bake for 20min until golden brown. 

Serve warm with a dipping sauce (tomatoe, or sweet chilli sauce)

Tuna Toasties

Serves 2

1 ti tuna, drained
45ml mayonnaise light
4 slices bread white/brown
2 slices cheese
15g margarine/butter
15ml olive oil

Mix tuna, mayonnaise and spread over two slices of bread,place cheese slices on top of tuna and  put the other slice of bread on top.
Melt margarine/butter and mix with olive oil, brush over both sides of  the sandwich.
Gill in sandwich maker or co in a wide pan over moderate heat till brown.










Orange Coconut Cake
cake:
125ml coconut
250ml milk
125g butter
15ml grated orange rind
250ml castor sugar
2 eggs
icing:
375ml icing sugar
15g soft butter
30ml orange juice

Mix the milk and the coconut and allow to stand for an hour
Pre-heat oven to 170'cand pre-pare a loaf tin.
Cream butter,orange rind,and sugar till light and fluffy, beat eggs into mixture one at a time
Stir in half the coconut mixture and half the sifted flour.  Then stir in the remaining coconut and flour, stir until smooth.
Pour mixture into pan and bake for an hour.  Allow to stand for 5 minutes before turning out. 
Sift icing sugar, stir in butter and enough orange juice to make a spreadable consistency. 
Ice the cold cake and decorate with orange wedges.

Ice-Cream & coffee Shake



I think that this following recipe is one going to be of my hubby's new Favorite drinks


2(100g) Bar one chocolate bars
60ml milk
50ml lukewarm strong coffee
750ml Vanilla Ice-cream

Serves 4-6

Divide the lukewarm coffee into4-6 glasses and add a scoop of ice-cream.

Cut Chocolate bars into pieces. Pour the milk into a small saucepan, add the chocolate pieces and heat over moderate heat, stirring  until the chocolate has melted set aside to cool down.

Pour the chocolate sauce on top and serve while the coffee is still warm.






The past week went by quiet quickly, but enjoying my new job, going much better than I thought. We had a annual towns Mayfare this weekend with lots to eat.  One of my families favourite is of course the mini-doughts with caramel and chocolate sauce Chip twister with spice and the church made their famous burgers that was delicious.

I haven't really had much of a chance to update blog, sorry to my followers.  It has been a busy week I started  a new job as a PA on a Piggery on Tuesday maybe time will tell if this new job is for me, it is a 360'c turn from my previous job,and other than that just feels every thing is going wrong. I will pick up the pieces and I will definetly try and post something new every day again. Tommorrow is Mothersday and I will probably be making something yummy like I do every year (cooking and cleaning) oh!! the Joys of Mother Hood.
